Despite its name, the «Prague» cake and a classic recipe in no way affiliated with Czech Republic. Chocolate delicacy is a Soviet variation on the theme «Sacher», which has gained popularity abroad of the Union. Now about the origins of the recipe already nobody remembers, but this need not, because now this luxurious chocolate cake was a favorite treat worldwide.

Cake «Prague» – a classic recipe made according to GOST

Since this delicacy was born in the Soviet times, no ancient recipe of the cake «Prague» no, but there is a Soviet GOST – recognized standard with win-win taste. We decided to go in this recipe.

Ingredients:

For cake:

  • eggs — 6 PCs.;
  • flour — 115 g;
  • sugar — 135 g;
  • cocoa — 25 g;
  • butter — 45 g

For the cream:

  • the yolk of one egg;
  • water — 20 ml;
  • condensed milk — 115 ml;
  • butter — 210 g;
  • cocoa 15 g

For decoration:

  • apricot jam 65 g;
  • heavy cream — 105 ml;
  • dark chocolate — 110 g.

Cooking

Start with cooking cakes for them first, connect among themselves all the dry ingredients from the list. Separately turn into foam egg whites, whisk the yolks also with sugar. Carefully, so as to retain the maximum amount of air, mix the whites with the yolks and pour them to the dry components. When you have the finished dough, mix it with melted butter, pour into a 20-cm form and leave to bake at 180 degrees for 35 minutes.

For the cream whisk the egg yolk with water and condensed milk. Cook the mixture on a minimal heat until thick, then cool. Whisk soft butter until white portions start to pour to it the cooled thickened mixture. In the finale, add the cocoa and send the cream to cool.

Divide the cakes three branches and brush the cooked cream. After collecting the cake together, cover it with a layer of apricot jam. Heat the cream and pour their chocolate, and after a couple minutes, stir and pour the ganache surface layers. Real cake «Prague» is ready, it remains only to cool it and to complement the décor according to your taste.

Cake «Prague» – a classic recipe with sour cream

Ingredients:

For cake:

  • condensed milk — 390 ml;
  • cocoa — 35 g;
  • eggs — 4 PCs.;
  • sour cream — 390g;
  • soda — 1 tsp.;
  • flour — 420 g;
  • sugar — 210 g.

For the cream:

  • butter — 310 g;
  • condensed milk — 1 Bank;
  • cocoa 55 g.

Cooking

Mix cocoa together with condensed milk and sour cream. Start to add to the base dough for cake eggs, whisking constantly to add to the cake volume. Alternately pour the eggs to the dough and sugar, and when the ingredients start to come together, and the sugar crystals will dissolve, gradually start to pour the flour. In the final mix with slaked soda.

Divide the dough between a pair of the oiled forms for baking, and then send in the oven for 35 minutes at 185 degrees. Refrigerate the cakes.

For the cream whisk the softened butter together with condensed milk and cocoa, and then cover the obtained air mass of each cake layer and sides of cake.

A classic recipe of cake Prague at home

Ingredients:

For cake:

  • flour — 175 g;
  • cocoa 55 g;
  • egg whites — 8 PCs.;
  • egg yolks — 5 PCs.;
  • baking powder — 2 tsp.;
  • sugar — 185 g;
  • water 145 ml;
  • vegetable oil — 115 ml.

For the cream:

  • condensed milk — 115 ml;
  • cream — 65 ml;
  • cocoa 10 g

Cooking

Connect the dry ingredients of crust together. The yolks of eggs beat up with sugar and butter, pour them water, and then add and mix dry ingredients. The whites turn into foam and gently mix with the foam test. Pour it all into 22 cm form and Express bake at 160 degrees for 45-55 minutes. Cool the cake and divide in half.
